Money and Budgetting
In the current financial crisis, it is more important than ever to manage your money well. It is important to control your money and not let your money control you. People in all income levels struggle with this and one of the most vital aspect to good money management is controlling your spending - this is because - Its not what you make, its what you spend that is important. You can make a lot of money, but if you spend more, you will not have any!
The only way to get control of your spending is by having a budget. You need to know what funds you have coming in and what you have going out. Whether you do it on a weekly basis or a montly basis does not matter. What is important is that you get a good picture of this. Many people do not want to do this for a variety of reasons. Some don't want to see how bad their money situation is, some do not want to be 'told' how to spend their money, some don't think they need to and some simply do not know how. But, not knowing has never helped any situation and living beyond our means has not only been a problem on an individual level for many people, but it is now a huge problem on a national level.
So, the way to get control of this and prepare a budget is to find out how much you spend and what you spend it on. The best and most accurate way to do this is to write down everything you spend for one month. At the end of the month, you may be surprised. In fact, you may be very surprised.

Food and Recipes:
In 1998, when I quit my job at the bank I went to cooking school. I have always had an interest in cooking and eating good food, both tasty and healthy (although some of the tastiest things are not so healthy)! I find it very theraputic to prepare and cook food and it is a great pleasure to feed people food that they love. Many people do not have the time or inclination to prepare food for themselves. There are many easy, healthy meals that one can prepare every day. Listed below are some ideas and some of my favorites.
Roasted Fennel:

Zucchini and Mushrooms:
Slice zucchini into matchstick pieces about ¼” square by 1 ½” long. Put on baking dish and sprinkle olive oil, dried tarragon, black pepper and a bit of salt on top and roast (@ 400°) for about 20 mins. Take out of oven and stir, add sliced mushrooms and bake another 15-20 minutes.
